I’m really enjoying my new waffle maker. These low carb chocolate-pecan waffles went down a treat with the family. Prep 5 minutes. Cooking time 5 minutes. Per waffle
Calories 405 calories P 10g C 13.6g F 36g Ingredients (makes two waffles) 60g blended dessicated coconut into a flour or butter 2 eggs 20g chopped pecans 15g dark chocolate chips 1/4 tsp of baking powder 1/2 tsp of cinnamon Maple syrup or low carb alternative Instructions To make coconut butter blend 250g of desiccated coconut in a food processor or blender until it reaches a paste-like consistency. Measure out 60g of coconut butter and place in a mixing bowl. Place the remaining coconut butter in a jar for later use. Coconut butter will solidify at room temperature. To use again place jar in a bowel of warm water until it softens. Combine coconut butter with eggs, baking powder, cinnamon, pecans and chocolate chips and mix into a batter. Add a dash of milk or milk alternative if batter is too thick. Pour equal amounts into a waffle maker and heat for 5 minutes. Top with chopped strawberries, blueberries and maple syrup.
